Spinach & Artichoke Bread Roll Tree

Dinner rolls don't have to be an afterthought that get thrown into a bowl right before the meal is served. Make a festive tree out of stuffed spinach rolls for your holiday dinner.

Yields6 Servings
 1 cup Frozen spinach, thawed
 1 cup Frozen artichoke hearts, thawed
 1 lb Mozzarella, grated
 1 ½ cups Ricotta Cheese
 ¼ cup Parmesan
 Salt & Pepper to taste
 1 lb Store-bought pizza dough
 2 tbsp Flour for dusting
 2 tbsp Butter, melted
 1 Garlic clove, minced
 2 tbsp Chopped Parsley
 1 tsp Red pepper flakes

Preheat the oven to 350 degrees F.

Remove any excess liquid from the spinach and artichokes and place in a large mixing bowl. Add in the cheeses and season with salt and pepper then stir to combine and set aside.

Dust a work surface or large cutting board with flour and roll out pizza dough into a thin sheet. using a pizza wheel, cut the dough into 12 pieces.

Fill each square of the pizza dough with about 2 tablespoons of the spinach mixture and bring the corners together and place each ball seam-side down on the cutting board. Roll each ball to smooth out and place onto a baking sheet in the shape of a Christmas tree with 10 balls for the tree and 2 for the trunk.

Place into the oven and bake for 18-20 minutes.

In a small bowl, combine the butter, garlic, parsley, and the red pepper flakes. Season with a little salt and brush over the top of the “tree” once it comes out of the oven. Serve hot.

    the picture show more than 12 balls for the recipe. Do you use more pizza dough or do you make smaller balls to make the tree larger than 12 balls?

      We added more balls for the sake of the photo. You can add more as well. If you do desire to make smaller balls, consider baking time is less than recipe states. Just check them during baking. Happy holidays!
