You've never seen potato salad like this before! When I made this dish on the Wendy Williams Show, viewers went crazy...potato salad on a skewer; oh yes I did that! I am always coming up with innovative ways to serve up classic dishes. Skewers make it easy and fun to eat, and he tangy dressing will keep your guests coming back for this summer salad staple.

 1 lb Yukon gold potatoes, cut 1 ½ inch cubes
 ½ cup sour cream
 1 tbsp whole grain mustard
 2 tbsp white vinegar
 2 tbsp pickle relish
 ½ tsp celery salt
 ½ tsp black pepper
 ¼ tsp paprika
 ¼ cup thinly sliced green onions
 bamboo skewers (6 inches long)

Boil potatoes in salted water for approximately 10-12 minutes just until tender, not mushy. Drain water and chill potatoes until cool enough to handle.

In a bowl, mix mayonnaise, sour cream, mustard, vinegar, pickle juice, celery salt, black pepper, and paprika. Set aside.

Thread three to four potatoes on a bamboo skewer. Arrange potato skewers on a platter. Drizzle
dressing over top and garnish with green onions.
