One Pan Scalloped Potatoes

Scalloped potatoes is a classic dish and my version is flavorful and made with ease by creating it all in one pan. My pan of choice is the Ninja Foodi Neverstick Saute Pan.  2 tbsp butter
 ½ onion, diced
 2 cloves garlic, minced
 2 tbsp flour
 1 ½ cups milk
 4 oz cream cheese, softened
 1 ½ cups shredded Colby Jack cheese, divided
 ¼ cup grated parmesan cheese
 ¼ tsp dried thyme
 salt and pepper, to taste
 1 ½ lbs Yukon Gold potatoes, thinly sliced
 1 cup shredded mozzarella cheese
 Fresh chopped chives or parsley for garnish

Preheat oven to 400 ℉. Melt butter in Ninja Foodi Neverstick 3 qt. sauté pan and sauté onions and garlic over medium heat for 2- 3 minutes until softened and translucent.

Stir in flour and cook for 1 minute. Pour in milk and use a whisk to combine flour and onions with milk. Continue to whisk until flour is no longer visible.

Add in cream cheese and continuously whisk until cream cheese melts. Add 1 cup Colby jack cheese and parmesan cheese. As cheeses melt, sauce will begin to thicken. Season with dried thyme and salt and pepper to taste.

Remove pan from heat and arrange one layer of potato slices in pan in an overlapping fan pattern. Lightly season tops of potatoes with salt and pepper. Top with mozzarella cheese and arrange remaining slices on top. Season tops of potatoes with salt and pepper and top with remaining Colby jack cheese.

Place Ninja Foodi lid on pan and bake for 25 minutes.

Remove lid and bake an additional 15 minutes until cheese on top is browned and potatoes are tender.

Garnish with fresh herbs and serve immediately.
