Nothing says lovin’ like pizza in the oven! Friday night is pizza night in our house and my absolute fave is wood fired pizza. Mmmm, that rich smoky flavor that you get in restaurants with those fancy expensive ovens – well get ready to enjoy that same flavor right at home! My chef tip: browning your pizza in a cast iron skillet creates those crispy brown edges with that wood-fired feel. Save time, save money, and save the memories when you create this delicious gourmet pizza at home! And feel free to create your custom pizza using this recipe and a few additional toppings of your own.

Yields4 Servings
Prep Time10 minsCook Time15 minsTotal Time25 mins
Ingredients
 3-4 tablespoons olive oil
1 readymade raw pizza dough (store bought)
 Flour (for dusting)
 ¼ cup tomato sauce
 ¼ cup shredded mozzarella cheese
 ½ cup shredded Parmesan cheese
 1 Roma tomato, sliced
6 Fresh basil leaves, torn or roughly chopped
 1 tbsp olive oil
Kosher salt and fresh ground black pepper, to taste
Directions
1

Heat 12-inch cast iron skillet over medium low heat. Do not let it smoke.

2

On a lightly floured surface, gently knead dough. Stretch dough using your fingers or rolling pin. If
dough begins to shrink, let dough rest for 5-10 minutes. Dough should be stretched or thinly rolled to approximately 10-12 inches.

3

Pour olive oil into skillet.

4

Have all pizza toppings ready for assembly.

5

Gently lay stretched pizza dough in skillet.

6

Cook dough for 2-3 minutes until it begins to bubble.

7

Flip the pizza.

8

Spoon on tomato sauce.

9

Sprinkle on cheese and arrange tomatoes around pizza.

10

Lower temperature to low. Cover skillet and cook pizza for 7-9 minutes, until crust is cooked and cheese is melted. During cooking, check bottom of pizza to insure crust is not browning too quickly.

11

For a crispier pizza, place pizza in skillet under oven broiler for 3-4 minutes.

12

Remove from pan and garnish with basil, a drizzle of olive oil and salt and pepper to taste.
