Gramma’s Jamaican Banana Fritters

Heat 2 to 3 inches of oil in a heavy-bottomed pot to 350 to 360 degrees F.
Peel the bananas and mash in a large bowl. Add the flour, baking powder, salt, apple pie spice, milk, and eggs; mix until well incorporated.
Using a medium (3/4 ounce) cookie scoop, first dip the scoop in the hot oil, then scoop some of the batter and gently add it to the oil. Fry in batches until the fritters are golden brown and float to the top, 2 to 4 minutes.
