  cup sugar
 ¼ cup flour
 pinch of salt
 ¼ cup sweetened condensed milk
 3 eggs, beaten
 1 can coconut milk
 ¼ tsp vanilla extract
 2 tbsp unsalted butter
 23 bananas, sliced
 1 box ginger snaps
Whipped Cream
 1 cup heavy whipping cream
 3 tbsp powdered sugar
Optional garnish
 toasted shredded (sweetened) coconut
 plantain chips
 mint sprigs

In a saucepan, over low heat, combine sugar, flour, and salt. Pour in sweetened condensed milk and coconut milk. While whisking throughly, slowly add in eggs. Continue whisking until well incorporated and mixture begins to thicken , for approximately 5-7 minutes.

Once it thickens, remove from heat. Stir in vanilla, spices, and butter. Continue stirring until butter melts.

Place pudding in refrigerator for 20-30 minutes to cool down. Layer ginger snaps, sliced bananas, and pudding in a serving dish or glasses. Chill for at least an hour. Top with whipped cream and toasted coconut.
