Dijon Roasted Potatoes
Potatoes are so versatile, so delicious and roasting them in olive oil makes them oh so heart healthy! I use Dijon mustard to create that perfectly golden brown crust and crunch on the outside; and that tangy zest of flavor on the inside. Add this recipe to your repertoire and give your potatoes a makeover they’ll love!
Preheat oven to 400 degrees.
Combine all ingredients in large bowl.
Toss to coat well.
Place potatoes on baking sheet and roast for 18-25 minutes, or until fork tender.
To serve, transfer potatoes to serving bowl or platter . Top with any fresh or dried herbs for garnish if desired.
