I always make it a point to serve a dip at any function I am hosting. There is something magical that happens when there is a tasty dip on the table. It is a communal gathering place around an addictive bowl of deliciousness that keeps people coming back for more. You would be amazed at how many good conversations take place at the dip bowl. I have seen business deals done, life long friendships made, and a couple make a love connection at my dip stations. I'm telling you, start serving more dips like this one at your events. With the creamy, sweet and smoky flavors it will be love at first dip!

 2 tbsp olive oil
 1 cup cherry tomatoes, halved
 ¼ onion, roughly chopped
 2 garlic cloves
 2 green onion sprigs, roughly chopped
 1 jalapeno, seeded
 3 avocados, peeled and pitted
 1 lemon, juiced
 salt and pepper, to taste

Toss together oil, tomatoes, onion, garlic, green onion, and jalapeno in a bowl.

Heat a sauté pan or grill pan to high heat. Pour in vegetable mixture. Allow vegetables to cook just until they get dark charred for 4-6 minutes. Stir to prevent burning. Season with salt and pepper.

Remove from pan and allow vegetables to cool slightly.

In a food processor or blender, puree avocado with lemon juice until smooth. Pour into a bowl.

Finely chop the charred vegetables so that some chunks remain. Mix in with avocado. Stir until well combined. season with salt and pepper. Serve along with chips or crudité.
