Goat Cheese Stuffed Mushrooms
My piping hot cheesy stuffed mushrooms with fresh herbs are sure to please any crowd! I always add a meatless hors d’oeuvre to any party menu, but these bites are so hearty and delicious you’d never know that they’re vegetarian! I like using goat cheese for its creaminess and rich tanginess – but feel free to substitute with cream cheese or Boursin for a milder flavor. My party tip: serve these as a passed hors d’oeuvre – if this tray doesn’t keep moving, there’s a high risk one party goer will eat them all! Trust me, I know!
Preheat oven to 400˚F.
Spray foil-lined baking sheet with cooking spray.
In a bowl mix together garlic, goat cheese, parsley, bread crumbs, Parmesan cheese, salt, pepper, and olive oil using a fork.
Use a spoon to fill mushrooms.
Place on baking sheet and bake for 15-20 minutes until tops are golden brown and mushrooms are tender.
