Garlic Herb Spatchcock Turkey
Spatchcock is another name for butterflying your turkey and it cuts cooking time in half!

The Herb butter isn’t just for the turkey. Mix into mash potatoes, green beans, or serve with bread. By tucking the butter under the skin, you won’t have to baste turkey throughout cooking process. Don't want to use butter? Use olive oil instead to create an herb oil to spread under skin.
Mix butter, garlic, herbs, lemon zest, juice, and salt and pepper together well. Spoon mixture into plastic wrap and shaped into a log. Seal tightly and chill in refrigerator until firm.
Preheat oven to 350˚F. To prepare turkey, slice along both sides of back bone with a sharp knife. Using kitchen shears, cut out back bone and discard. Flip turkey over and press firmly on breastbone until turkey lays flat. Place turkey on a wire rack resting inside of a large baking dish.
Season both sides of turkey with salt and pepper.
Once herb butter is firm enough to slice, tuck several slices under the skin of turkey.
Roast turkey in the oven for 1-1 ½ hours (depending on weight of turkey) or until internal temperature is 180 ˚F in the thickest part of the thighs.
