Cranberry Pookies
Pookies are the new treat in town. Pookies are a cross between a pie and a cookie and can be made with just a few ingredients.
Preheat oven to 375 degrees Fahrenheit.
Dust a cutting board or countertop with flour and roll out the pie crust.
Using a 2 1/2-inch cookie cutter, cut an even number of circles out of the pie crust.
Place half of the circles onto a baking sheet lined with parchment.
Use a 1 inch or 1 ½ inch star cookie cutter to cut a smaller hole in the remaining circles.
Place 1 teaspoon of the jam in the center of each full circle and brush the edges with water.
Place the remaining circle over the top so that the jam is exposed and press the edges down to seal.
Place in the oven and bake for 8 to 12 minutes until golden brown.
Remove from the oven and cool.
Once cooled sprinkle with powdered sugar.
