Preheat oven to 350 ℉.
To make crumble topping, combine flour, sugars, apple pie spice, and salt. Using a fork or pastry cutter, cut cold butter cubes into flour mixture until it appears crumbly and most of butter is evenly combined. Set aside and make filling.
To make filling, melt butter in sauté pan over medium heat and add apples to pan.
Stir in brown sugar and salt and cook for 3- 5 minutes.
In a small bowl, thoroughly mix flour, bourbon, and lemon juice together to make what is called a slurry.
Pour slurry over apples and stir until apples are evenly coated.
Remove pan from stove and sprinkle topping evenly over top of apples.
Place pan in oven and bake for 25- 30 minutes until bubbling and apples are tender.
Serve crumble warm alongside a scoop of ice cream or topped with whipped cream.
