Bring your dinner to life with this colorful blend of sautéed vegetables! Succotash is a delicious and quick cook up of vegetables made mostly of corn and lima beans. Throw in your favorite vegetables: tomatoes, green beans, okra, etc. and make this dish your own! Warning to picky eaters - be careful, this dish is so tasty, you probably won’t even notice that you are eating healthy!

Ingredients
 2 tbsp olive oil
 1 lb (about 2) medium zucchini, diced
 1 red bell pepper, diced
 ½ cup diced onion
 2 cloves garlic, minced
 1 cup frozen corn kernels
 1 cup frozen lima beans
 ¼ cup chopped parsley
 Salt and pepper, to taste

In a large skillet, heat oil over medium high heat.

Add zucchini, bell pepper, onion, and garlic.

Sauté for 5-6 minutes.

Stir in corn and lima beans.

Cook, tossing, until corn and beans are tender and beginning to brown, about 5-8 minutes.

Remove from heat.

Stir in parsley; season with salt and pepper.
