You know that feeling when you’re craving a really good slice of pie, guilt-free? Then you have to try my gluten free, no sugar added, single- serving Vegan Apple Pie! It delivers all of the warm comforting flavors of grandma’s apple pie, is naturally sweetened with dates – and only takes 10 minutes to bake! I’m not vegan, but let me tell you - this yummy crisp proves that delicious and vegan are a match made in heaven! Enjoy!

Ingredients
 1 Granny Smith apple, peeled, thinly sliced
 2 dates, pitted
 4 tbsp hot water
 ¼ tsp cinnamon
Ingredients (Crisp)
 2 tbsp quick cook oats
 1 tbsp olive oil

Preheat oven (I use my toaster oven) to 375˚F.

In a small bowl, place apple slices.

Puree dates and hot water in a food processor.

Pour date puree over apples and toss with cinnamon.

Spoon apples into heat proof ramekin.

Mix oat and olive oil together and top apples.

Bake for 10-12 minutes until apples are tender and oats just begin to brown.
