Salmon is my all-time favorite fish to cook. It is hearty, meaty, cooks easily, works great with all types of sauces and seasonings, plus it’s heart healthy. Change the game and take your salmon to the next level by roasting it on a cedar plank! Your family & friends will have plenty to talk about when you serve this showstopper full of sweet, tangy, herbaceous flavor and a perfectly crispy crust. I promise this dish will change the way you enjoy salmon!

Ingredients
 Cedar wood plank (Purchase at grocery or culinary store)
 1 whole salmon filet, skin off
 Olive oil
 Salt and Pepper
 ¼ cup Dijon mustard
 2-3 tablespoons dried or fresh dill
 3 tbsp brown sugar

Preheat oven to 350˚F.

Place plank in oven for 5-10 minutes.

Remove from oven and place on a sheet pan.

Brush generously with olive oil.

Prepare salmon filet by seasoning both sides with salt and pepper.

Spoon on Dijon mustard and sprinkle with dill and brown sugar.

Rest salmon on plank and roast for 15-20 minutes or until cooked and flaky throughout.

Adjust oven setting to high broil, and cook salmon for additional 5 minutes until top is golden brown.
