Pineapple Cole Slaw

This dish is the epitome of my “Southern sweet meets Caribbean heat”! In the south, we serve a mayo-based cole slaw and the sweeter the better. In the Caribbean, we serve a vinegar and oil based slaw that helps cool down spicy Caribbean dishes. In this recipe, the Caribbean style slaw wins the battle in the lite bite category! Using a lighter dressing definitely has its benefits; not only do you cut calories and saturated fat – but it travels better under various temperatures for meals on the go! I add pineapple for sweetness and texture, and if I am really showing off, I char the pineapple for even more flare. Great as a side dish or crunchy topping on a taco or burger.
In a large bowl, mix shredded slaw, red bell pepper, cilantro, and pineapple.
Pour dressing over slaw mixture.
Toss well to evenly coat. Refrigerate for 30 minutes and re-toss.
Serve and enjoy.
