My Nana’s Banana’s Pudding

If you love bananas then you love banana pudding, right? My Nana used to make banana pudding for us when we did well (or got good grades) in school! Well, if you know anything about Caribbean folks and desserts, they do not like "tings" too sweet! Nana would add sweetened condensed milk to her pudding to replace some of the sugar. This offers a subtle sweetness in the pudding which allows the flavors of the cookies and the bananas to truly come through.

 ¼ cup sweetened condensed milk
  cup sugar
  cup flour
 pinch of salt
 3 eggs, beaten
 2 cups milk
 1 tsp vanilla extract
 2 tbsp unsalted butter
 4 bananas, peeled and sliced
 24 cups wafer or gingersnap cookies
 whipped cream, for garnish
 ground nutmeg, for garnish

In a saucepan, over low heat, combine sweetened condensed milk, sugar, flour, and salt until sugar starts to dissolve. Add in eggs and milk. Stir thoroughly until well incorporated and mixture begins to thicken , for approximately 5-7 minutes.

Once it thickens, remove from heat. Stir in vanilla and butter. Continue stirring until butter melts.

Place pudding in refrigerator for 20-30 minutes to cool down. Layer wafers, sliced bananas, and pudding in a serving dish or glasses. Chill for at least an hour. Top with whipped cream and nutmeg when ready to serve.
