Here is a quick and easy go to for a weeknight meal or a fast party appetizer for an impromtu gathering.

 6 inch bamboo skewers
 2 lbs boneless, skinnless, chicken breast, cut into 1 inch thick strips
 6 tbsp fresh lemon juice
 3 tbsp olive oil
 3 tsp fresh oregano leaves, finely chopped
 3 garlic cloves, minced
 1 ½ tsp salt
 ¼ tsp paprika
 ½ tsp red pepper flakes

Soak bamboo skewers in water to prevent burning during cooking.

Combine all ingredients in a large plastic bag. Toss well to evenly coat. refrigerate 30 minutes.

Thread marinated chicken on bamboo skewers. Cook in non-stick sauté pan or on grill over medium high heat about 8 minutes or until chicken is no longer pink inside, turning halfway through cook time. Serve immediately.

      Hi Valerie, Thanks for catching typo in the system. It should read 2-3 lbs. of chicken.
