Margarita Shrimp Ceviche

This shrimp ceviche recipe with lime, orange, and tequila is bursting with margarita flavor that is perfect for summertime. Serve in a cocktail glass for a fun and festive presentation.

 1 lb large shrimp, peeled and deveined
 ¼ cup fresh lime juice
 1 orange, juiced
 3 tbsp tequila
 2 Roma tomatoes, seeded and diced
 1 avocado, diced
 1 jalapeno, finely diced
 2 tbsp cilantro, minced
 ¼ tsp salt
 lime juice
 cayenne pepper
 crispy fried plantain chips

Fill a large bowl with ice water.

Bring a large pot of salted water to a boil and add the shrimp. Cook for 1 minute, drain, then immediately put the shrimp into the ice water to stop them from cooking further.

Cut the shrimp into 1/2-inch pieces and transfer to a bowl. Stir in the lime juice, orange juice, and tequila. Cover and refrigerate for 30 minutes.

To the shrimp mixture, add the tomato, avocado, jalapeño, cilantro, and salt. Stir gently to combine. Chill until ready to serve.

To serve, combine salt and cayenne pepper in a small bowl. Rim a glass with lime juice and coat with salt and pepper. Spoon ceviche into glasses. Garnish with cilantro leaves and plantain chips. Yield: 4 Servings; Calories: 304
