Mandazi (African Fried Donuts)

Mandazi is slightly sweet fried dough popular in Eastern Africa, and very similar to New Orleans style beignets. These little donuts pack a spicy punch full of flavor and can be served warm for breakfast, or as a sweet treat after dinner. Dust with powdered sugar and Enjoy! (Makes 18-24 donuts.)

Ingredients
 2 cups all-purpose flour
 1 ½ tsp baking powder
 1 tsp salt
 ½ tsp ground cinnamon
 ½ tsp ground cardamom
 ¼ tsp ground nutmeg
 ¼ tsp ground ginger
 ¼ cup sugar
 2 tbsp vegetable oil
 1 egg beaten
 ½ cup coconut milk
 3-5 cups vegetable oil for frying
 Powdered sugar

In a medium bowl, mix flour, baking powder, salt, spices, and sugar.

Mix oil, egg, and coconut milk together and gradually add to flour mixture.

Knead the dough until all ingredients are well combined to a smooth ball.

Let dough rest for 5-10 minutes.

On a lightly floured surface, roll dough out into ½ inch thickness.

Cut into triangles.

Heat oil to 375˚F.

Gently lay triangles into hot oil.

Turn over a few times until golden brown.

Fry in batches and do not overcrowd fryer.

Remove from fryer and drain on paper towels.

Sprinkle with powdered sugar if desired.
