Lemon Sesame Chicken Stir-fry

Who ordered Chinese Food? That’s what your family will ask when they “wok” in the house and smell the fragrant, citrus aroma wafting from your kitchen! This easy sauce is great for pork, chicken, or shrimp, and by creating a marinade and a sauce at once - this dish is equal parts easy and delicious. Serve over brown or white rice. Ingredients
 1 pound skinless, boneless chicken breast, cut into large bite size pieces
 ¼ cup soy sauce
 4 tbsp dark brown sugar
 Zest of one lemon
 ½ lemon, juiced
 1 tbsp fresh ginger, grated
 2 cloves garlic, minced
 1 tbsp white vinegar
 2 tsp teaspoons cornstarch
 1 tbsp tablespoon sesame oil
 1 tbsp tablespoon vegetable oil
 1 cup red peppers, thinly sliced
 12 oz frozen broccoli
 ¼ cup chopped onions
 ¼ cup sliced green onions
 2 tbsp sesame seeds

In a small bowl, whisk together soy sauce, brown sugar, lemon zest and juice, ginger, garlic, cornstarch, and sesame oil to make marinade.

In a separate bowl, stir in ¼ cup of marinade and chicken. Marinate for 10-20 minutes. Reserve
remaining marinade to make sauce.

In a non-stick sauté pan, heat oil over medium high heat.

Brown chicken for 3-4 minutes, stirring occasionally.

Add in bell peppers, broccoli, and onions. Cook an additional 5 minutes, continuing to stir.

Pour in reserved marinade and stir well. Lower heat to medium and cover.

Cook at a simmer for 6-8 minutes until carrots and broccoli are tender.

Top with green onions and sesame seeds. Garnish with lemon wedges.
