Jerk Spiced Fried Corn

Yields1 Serving

 4 strips bacon
  cup 1/3 cup chopped white onion
 ¼ cup 1/4 cup chopped green bell pepper
 ¼ cup ¼ chopped red bell pepper
 1 tbsp 1 tablespoon of flour
 12 oz 1 (12 oz. bag) of frozen corn
 2 tsp 2 teaspoons Jerk spice seasoning
 2 tbsp 2 tablespoons unsalted butter
 2 tsp 2 teaspoons sugar
 ½ cup ½ cup evaporated milk
 2 tbsp 2 tablespoons sliced green onion

Using a cast iron skillet or heavy bottom frying pan, fry bacon until cooked crisp. Remove bacon from pan and slightly cool. Chop bacon into pieces and set aside.

Reserve about a tablespoon of bacon grease in pan. Over medium heat, sauté onion and bell pepper for 1-2 minutes as vegetables begin to brown and soften. Stir in flour. Cook for an additional minute. Add in corn and butter. Season with Jerk spice seasoning and sugar. Cook for 3-5 minutes.

Remove from heat. Sprinkle chopped bacon on top. Garnish with green onions . Serve warm.
