Italian Herbs & Cheese Bread

There is nothing sweeter than the smell of bread fresh out of the oven. My grandmother would make these massive loafs of homemade bread every Sunday. I remember thinking as a kid, "Why does this process take so long? I want my bread , now!" Well much has not changed since that time; I'm still impatient when it comes to making bread and I hate the mess it makes. So, I modified my grandmother's recipe to create a bread that is just as delicious with less mess and time in the kitchen. I hope you enjoy it!

 3 cups all purpose flour
 3 tbsp sugar
 1 (.25oz) pack rapid rise yeast
 1 cup warm water
 2 tbsp dried Italian seasoning
 2 tbsp unsalted butter, melted
 2 tbsp olive oil
 2 tsp salt
 ½ cup Italian blend cheese, shredded

Preheat oven to 375˚F. Spray loaf pan with cooking spray.
In a gallon size plastic bag, pour in 1 cup of flour, sugar, yeast, and water. Press down to remove excess air from bag. Close bag tightly and squish ingredients in bag until mixed. Let bag sit for 10 minutes to activate yeast.
Add 1 cup of flour, dried seasoning, melted butter, oil, and salt. Close bag and mix. Add last cup of flour and mix again until all ingredients are well incorporated and dough begins to pull away from the bag.

On a lightly floured surface, pour dough out of bag. Gently knead dough until it comes together in the shape of a loaf.
Place dough into loaf pan and cover with a kitchen towel. Let dough rest and rise for 30 minutes.
Once dough has risen, top with shredded cheese and bake until golden, about 25-30 minutes.
