Potatoes are so versatile, so delicious and roasting them in olive oil makes them oh so heart healthy! I use Dijon mustard to create that perfectly golden brown crust and crunch on the outside; and that tangy zest of flavor on the inside. Preheat oven to 400 degrees.
Combine all ingredients in large bowl.
Toss to coat well.
Place potatoes on baking sheet and roast for 18-25 minutes, or until fork tender.
To serve, transfer potatoes to serving bowl or platter . Top with any fresh or dried herbs for garnish if desired.
