 2 tbsp olive oil
 2 tsp curry powder
 ½ tsp garlic powder
 1 tbsp flour
 2 cups leftover grilled chicken, pepper, and onion fajitas
 1 cup canned and cubed pineapple, with juice
  tsp red pepper flakes

Place a non-stick skillet over medium heat and add 2 tablespoons olive oil, 2 teaspoons curry powder, 1/2 teaspoon garlic powder, 1 tablespoon of flour. Stir to make a roux.

Add in the leftover fajita chicken (grilled chicken with peppers and onions) and toss to coat.

Add one cup canned pineapple with juice and stir to warm through.

Add a pinch of red pepper flakes and serve over rice.
