Grilled Guacamole

 2 tbsp olive oil
 2 roma tomatoes, halved and seeded
 ¼ red onion,
 2 garlic cloves
 1 jalapeno, seeded
 3 avocados, halved
 2 tbsp lime juice
 ¼ cup chopped cilantro (optional)
 salt and pepper, to taste

Toss together 1 tablespoon of oil with tomatoes, onion, garlic, jalapeno in a bowl.
Brush cut avocado halves with remaining oil.

Heat grill pan to medium high heat. Grill until char marks appear, turning occasionally, 6-8 minutes. Brush avocados with remaining oil. Grill avocado cut side down, until charred, 4-6 minutes. Cool vegetables completely.

Finely chop onion, tomatoes, garlic, and jalapeno pepper; set aside. Peel avocados; transfer to a large bowl and mash with a fork. Stir in chopped vegetables, lime juice, cilantro (if desired), salt and pepper. Serve immediately with chips and colorful crudité.
