Peel plantains and slice into rounds.
In a hot non-skillet, evenly lay plantain slices in pan. brown on both sides.
Cut up a stick of butter and add pieces to pan with 3 tablespoons of brown sugar. Cook until plantain is caramelized and well coated in butter and sugar and the sauce slightly thickens.
Make your pancakes (from scratch or box mix) adding a pinch of nutmeg and a touch of cinnamon.
Spoon caramelized plantain on top. Serve them up family style piping hot!
