Cardamom Caramel Sauce

Are you over everything pumpkin spice? Then bring in the cardamom! Ground cardamom is pretty strong, so a little goes a long way. This caramel sauce is a great way to usher in a new spice into your flavor profile. Dip in sliced apples, drizzle over ice cream, top waffles or pancakes, whip into frostings, or spice up your morning latte; anyway you serve it up, you are going to be licking your fingers and loving it!

 1 cup sugar
 ¼ cup water
 1 tsp corn syrup
 ½ cup heavy cream
 ¼ tsp salt
 ¼ tsp ground cardamom
 1 tsp vanilla extract

Over medium heat combine the sugar, water, and corn syrup in a saucepan. Stir frequently until sugar dissolves.

As mixture comes to a boil, it will begin to change color. This can take approximately 7 to 10 minutes. Immediately, remove the pan from heat once it turns a light brown caramel color.

Carefully pour in heavy cream and stir in salt, ground cardamom and vanilla.

Once the caramel is smooth, pour into a glass container to cool. Store in the refrigerator. Microwave a few seconds to soften before serving.
