Baby has been craving simple salads - I think it's the crunch, acidity and salt. I made this salad with canned black beans, leftover corn, tomatoes, parsley and lime juice. This salad was prepared using only items I already had at home, so there's no specific amount for each ingredient. Use what you have and feel free to add or omit.
