White Bean Arugula Salad w/ Lemon Vinaigrette

Up your salad game from yawn to yay! Lemon and arugula go together like Oprah and Gayle, and this simple vinaigrette can wake up any salad with a power punch of flavor! The peppery notes of arugula are accentuated with use of the lemon, and the beans and red onions add just the right amount of texture and crunch. As a side or an entrée salad, this salad is a true champ.

Ingredients
 2 tbsp extra-virgin olive oil
 2 tbsp lemon juice
 2 tsp Dijon mustard
 2 tsp red wine vinegar
 ½ tsp salt
 ¼ tsp black pepper
 1 can (15 oz) Cannellini beans, rinsed, drained (or Navy beans)
 ¼ cup thinly sliced red onion
 1 Roma tomato, diced
 3 cups baby arugula

Whisk in a large bowl, oil, lemon juice, Dijon mustard, vinegar, salt, and pepper.

Stir in the beans, red onion, tomato, and arugula.
