Cheesy Tomato Soup

Serves 2-4 people

Ingredients:

  • 1 tablespoon olive oil
  • ½ onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 (28 oz.) can crushed tomatoes
  • 1 ½ cups chicken or vegetable broth
  • ½ cup reduced fat cream cheese
  • Salt and pepper

Directions:

  1. Heat olive oil in sauce pot over medium high heat. Stir in onions and cook for 1 minute. Add in garlic and cook an additional minute.
  2. Spoon in tomato paste and stir well to coat onions and garlic. Pour in crushed tomatoes and broth. Lower heat and simmer for 3-4 minutes.
  3. Whisk in cream cheese stirring just until cheese is melted and soup is thick and creamy. Garnish with crumbled bacon, cheese, or sour cream. Serve warm.
