Cheesy Tomato Soup
Serves 2-4 people
Ingredients:
- 1 tablespoon olive oil
- ½ onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 (28 oz.) can crushed tomatoes
- 1 ½ cups chicken or vegetable broth
- ½ cup reduced fat cream cheese
- Salt and pepper
Directions:
- Heat olive oil in sauce pot over medium high heat. Stir in onions and cook for 1 minute. Add in garlic and cook an additional minute.
- Spoon in tomato paste and stir well to coat onions and garlic. Pour in crushed tomatoes and broth. Lower heat and simmer for 3-4 minutes.
- Whisk in cream cheese stirring just until cheese is melted and soup is thick and creamy. Garnish with crumbled bacon, cheese, or sour cream. Serve warm.
